These are a great snack to take on a hiking or biking trip, or as an afternoon pick-me-up with a cup of tea. The packaging is so cute that you could bring these little gems to a party. Packed with superfood ingredients and so tasty, these power balls are Sansational!
Makes 34 small smooches
1/3 cup quick oats and/or quinoa flakes
1/4 cup protein powder (I used Genuine Health’s Vegan Proteins+)
2 tbsp hemp seeds
2 tbsp chia seeds
2 tbsp unsweetened shredded coconut
1/4 cup dried fruit (cranberries, blueberries, or chopped apricots)
1/4 cup mini chocolate chips (such as Enjoy Life brand)
1/2 cup of millet puffs (I used Nature’s Path brand)
1/2 tsp cinnamon
1/4 tsp sea salt
1 cup almond butter, or nut butter of choice
2 tbsp pure honey
2 tbsp local maple syrup
1. In a large bowl, combine the first nine ingredients together.
2. Add the nut butter, honey, and maple syrup and mix together.
3. Refrigerate for 5 to 10 minutes. Roll into balls and wrap in foil and shape tip to make a “smooch” or store in airtight container in the refrigerator for up to a week or in the freezer for up to two weeks.
To make these school-friendly, use sunflower seed butter instead of almond butter.
